Chef Arne Riehn reimagines seasonal flavors using Thai ingredients tailored to Thailand’s tropical climate

IGNIV Bangkok (1 MICHELIN Star since 2022) brings the vibes and flavors of European autumn to the tropics with its new menu, launching this August. The 18-dish menu highlights Thai produce and local ingredients, thoughtfully fused with fine European products to preserve the soul of the season.

The essence of Swiss autumn cuisine is traditionally rich, warmly creamy in flavor, and built around roasting and smoking techniques that evoke comforting aromas and textures. It’s a cultural expression that delivers hearty touches to reflect the climate and spirit of the season. Inspired by these foundations, Chef Arne Riehn thoughtfully incorporates seasonal autumn ingredients and locally sourced Thai produce to create a cross-cultural menu tailored to Thailand’s tropical climate—one that remains true to the essence of autumn, yet feels light and refreshing.

 

For the 2025 Autumn Menu, Arne Riehn captures the spirit of the season through the use of smoked duck, Iberico, and turbot. These premium proteins are elevated by Thai seasonal produce sourced from various provinces, including turmeric from Chiang Rai, tiger peanuts and sticky rice from Chiang Mai, chocolate from Lampang, Thai olives from Nakhon Pathom, fresh figs from Chonburi, and coconut from Samut Songkhram. Imported European autumn ingredients like black trumpet mushrooms, with their earthy aroma, and Piedmont hazelnuts, renowned for their full-bodied creamy flavor, further enhance the seasonal experience. 

 

“In Switzerland, autumn dishes are rich, creamy, and smoky. We reinterpret these flavors by pairing traditional Swiss tastes with fresh and sour notes to create a lighter feel that suits the tropical climate. While European autumn highlights spices, nuts, and fruits like figs and apples, we use local alternatives such as turmeric, Thai figs, and tiger peanuts to capture the same seasonal spirit,” said Chef Arne Riehn, Head Chef at IGNIV Bangkok.

 

Highlights from IGNIV Bangkok’s Autumn Menu 2025 begin with Herring – Taco – Mustard and Beef Tartare – Potato – Thai Olive for Snacks. Starters highlight reimagined autumn flavors, including Butternut Squash – Pumpkin Seeds and Smoked Duck – Cherry. The journey continues to mains, featuring refined dishes like Iberico Pluma – Parsnip – Chimichurri and Turbot – Black Trumpet – Beurre Blanc.

 

The menu concludes with sweet creations like Chocolate – Dulce de Leche – Tiger Peanut, made using locally sourced chocolate from Lampang, and Turmeric – Sticky Rice – Saffron, along with IGNIV’s signature Soufflé. To finish, guests are invited to visit the iconic Candy Store, packed with house-made pastries and jellies—perfect to take home for an indulgent encore.

 

The Autumn Menu is available daily for dinner from 6:00 PM to 11:00 PM at THB 5,500++ per person, or enjoy the Lunch Break Experience, which offers a glimpse of our Autumn Menu, from 12:00 PM to 3:00 PM for THB 3,200++ available from September 1, 2025 – November 30, 2025. A vegan, vegetarian, a la carte, or kids’ menu is also available to cater to guests’ requirements.
