Rossini's at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok, will host an exclusive one-night wine dinner, "North to South Italy – A Journey Through Terroir," on Friday 12 June 2026 from 6:00 PM to 10:00 PM. Presented in collaboration with JW Marriott Hotel & Suites Saigon, the evening brings together Rossini's resident Chef Stefano Merlo and guest Chef Francesco Leone of Basilico, the Italian restaurant at JW Marriott Hotel & Suites Saigon, for a menu that travels the length of the Italian peninsula.
Across an evening of canapés, antipasti, pasta, a signature main course and dessert, the two chefs trace Italy's regional terroir from the cool north to the sun-soaked south — each course paired with a hand-selected Italian wine chosen to mirror the journey.
Guests begin with a selection of Rossini's canapés and a sparkling welcome of Nino Franco "Rustico" Prosecco Superiore Valdobbiadene DOCG, before moving through highlights that include Il Crudo di Mazara del Vallo — sweet raw prawns with almond milk, citrus and aromatic basil oil — and the Venetian Lingua Salmistrata alla Veneta, crispy pickled veal tongue with parsley and anchovy sauce. Chef Leone's Fagottini alla Porchetta, triangular ravioli filled with porchetta, pine nuts and raisin relish, leads to the evening's main: Manzo al Valpolicella, Wagyu tenderloin glazed in Valpolicella with Treviso tardivo radicchio and celeriac purée. The meal closes with the Sfera di Gianduja, a gianduja mousse encased in a crisp chocolate sphere with hazelnut praline and olive oil gelato, followed by Rossini's petit fours.
The accompanying wine flight spans five regions, moving from Veneto and Lombardy in the north to Campania's Irpinia and the island of Sardinia — featuring Mastroberardino "Morabianca" Irpinia Falanghina DOC, Ca' dei Frati Rosa dei Frati Riviera del Garda Classico, Mastroberardino "Redimore" Irpinia Aglianico DOC, and Sella & Mosca "Tanca Farra" Sardegna Alghero Rosso DOC.
