Discover the artistry of tea with Tea Expressions Afternoon Tea, a refined new afternoon tea experience at Siam Kempinski Hotel Bangkok, crafted by Executive Pastry Chef Franck Istel.

Inspired by the nearly decade Chef Franck spent living and working in China, this collection reflects a personal journey shaped by tea culture, craftsmanship and flavour exploration. During those years, tea became a profound source of inspiration — shaping his palate, his craft and his approach to flavour.

This inspiration unfolds as a progressive tasting journey. The experience begins lightly and fragrantly, with floral and fruit-forward creations such as the Honey Poached Pear Choux with Jasmine Tea Chantilly and Osmanthus Lychee Mousse, evoking the elegance of spring gardens and the quiet beauty of traditional tea ceremonies. As the afternoon unfolds, deeper and more complex profiles emerge through hōjicha, Earl Grey and matcha, each chosen for its distinct character, from smoky and meditative to vibrant and uplifting.

These flavour transitions continue into the savoury courses, where Chef Franck’s philosophy that tea belongs equally within cuisine is fully expressed. Delicate combinations such as Earl Grey-smoked duck, jasmine-poached lobster, chamomile-smoked cod and English Breakfast tea-infused foie gras demonstrate how tea can bring depth, aroma and refinement beyond conventional herbs and spices.

Together, the savoury and sweet elements create a harmonious balance between East and West, tradition and modernity, delicacy and richness. French pastry craftsmanship meets the soul of Asian tea culture, resulting in an afternoon tea experience that feels both luxurious and deeply personal – a reflection of Chef Franck’s culinary journey and his enduring appreciation for tea as both ingredient and inspiration.
