A Royal Thai Summer Tradition at The Sukhothai Bangkok

The Sukhothai Bangkok presents Khao Chae, the refined royal Thai summer delicacy, crafted from the signature Celadon recipe by Chef Jib.

 

Rooted in Mon heritage and later embraced by the Thai royal court during the reigns of King Rama IV and King Rama V, Khao Chae has long symbolised elegance and seasonal relief during Thailand’s warmest months.

 

Chef Jib honours this legacy with meticulous attention to detail. Each grain of rice is carefully polished and gently rinsed before being immersed in chilled, jasmine-infused water. The delicate fragrance defines the dish’s refreshing character.

The accompanying condiments are crafted with equal precision:
 

  • Shrimp paste fritters (Look Kapi), rich yet balanced
  • Stuffed banana peppers wrapped in intricate egg net
  • Sweet stir-fried preserved radish
  • Shredded fish and pork for added texture and aroma

 

Ingredients are thoughtfully sourced from across Thailand, from premium shrimp paste in Ranong and freshwater fish from Kanchanaburi to organic jasmine blossoms from Nakhon Sawan — supporting local communities while preserving authenticity.
