In celebration of International Women’s Day, The Sukhothai Bangkok presents Culinary Journey Chapter 3, a special edition of its narrative-driven Sunday Brunch series. Designed to go beyond a traditional buffet, each chapter introduces a new culinary theme and invites guest chefs to present signature creations alongside Colonnade’s renowned brunch experience.
This edition brings together two inspiring chefs whose journeys reflect cultural exchange, personal storytelling and the evolving role of women in the culinary world: Chef Chapornpat “Jib” Dapachutisan of Celadon and guest chef Chef Prapat. Blending global influences with local ingredients, the collaboration highlights how cuisine can connect cultures, traditions and perspectives through thoughtfully crafted dishes.
A Meeting of Culinary Journeys
Born in Thailand and raised in New Zealand, Chef Prapat represents a truly cross-cultural culinary perspective. Classically trained in Western kitchens with strong foundations in French techniques, her approach is guided by macrobiotic and natural food philosophies. Her cooking balances Western precision with Asian ingredients, focusing on seasonality, ingredient integrity and well-being.
For this brunch, Chef Prapat presents Sous-Vide Smoked Salmon with Kaffir Lime Prawn Mousse, a dish that reflects her signature balance of technique and natural flavour. Slow-cooked salmon is paired with delicate prawn mousse infused with kaffir lime and tarragon, complemented by fennel and orange salsa, coconut beurre blanc and aromatic herb oil for a fresh and vibrant finish.
Complementing this global perspective is Chef Chapornpat “Jib” Dapachutisan, who joined Celadon in 2024 with over 19 years of experience in luxury hospitality. Known for combining classical French technique with authentic Thai flavours, her cooking celebrates Thai heritage through refined presentation, local sourcing and storytelling through food.
Chef Jib presents Biryani Rice with Herbs, Grilled Local Ornate Threadfin Bream & Spicy Oxtail Soup, inspired by the historical journey of biryani from Persia and India to Thailand. Fragrant jasmine rice cooked with aromatic spices and turmeric is paired with grilled threadfin bream sourced from small-scale fishermen in Ranong, Thai mint dipping sauce, and a rich, spicy oxtail soup prepared using responsibly sourced beef.
Together, the collaboration reflects the exchange of culinary traditions and celebrates the creativity and influence of women shaping the future of gastronomy. Guests are invited to experience a Sunday Brunch that combines storytelling, craftsmanship and cultural discovery in one memorable afternoon. Following this Chapter Three, Chapter Four will follow in April 2026
