Throughout August, VIU's celebrated Signature Sunday Brunch shines a spotlight on duck, with Executive Chef Matteo Fontana presenting a curated selection of seasonal creations inspired by family recipes and contemporary Italian cuisine. Highlights include Braised Duck in Five Spice Soup, Smoked Duck Salad with Poached Apricot and Balsamic Dressing, Homemade Duck Ravioli inspired by cherished Sunday lunches at Chef Matteo's grandmother's home, Duck Ragout Orzotto with Saffron and Gremolata, and Sous Vide Duck Breast with Eggplant and Stuffed Baby Onion. These seasonal specialties are served alongside VIU's signature brunch favorites, including a French caviar trolley, foie gras crostini, grilled Boston lobster, premium cold cuts and cheeses, à la carte appetizers, pass-around pizzas, and signature tableside tiramisu and Valrhona chocolate desserts.
