The quarterly Brunch Club of VIU restaurant has returned with special six guests from Disciples Escoffier Thailand, along with Chef Matteo Fontana who will be turning VIU’s regular brunch into a truly unique meal with one-day-only Signature Sunday Brunch on Sunday, July 13, 2025. In this quarter, VIU is celebrating the timeless traditions of French cuisine, and seven renowned chefs are coming together to honor the culinary legacy of Georges Auguste Escoffier, the legendary figure known as the father of modern French cooking.
In partnership with Disciples Escoffier Thailand, this unforgettable brunch brings a dream team of chefs into the spotlight – each presenting a unique dish inspired by Escoffier’s enduring influence, reimagined with a creative modern twist alongside VIU’s signature brunch offerings. Expect a menu filled with French charm – a journey that begins with a freshly baked bread basket served with Beillevaire demi-sel croquant butter, premium cold cuts, and creamy Beillevaire cheese, followed by a smooth and flavorful French foie gras terrine. From the live station, guests can enjoy Oeuf Meurette, a comforting brunch dish from Burgundy featuring poached eggs, mushrooms, red wine sauce, and sourdough croutons. Also on offer is a Duo of Crudo — delicate pairing of scallop and tuna tartare, topped with Prunier House caviar.
Main courses are served at the table and showcase French techniques and sauces: Mia’s Signature Chawanmushi with Grilled Lobster Tail and Aerated Espuma; Organic Chicken Supreme with Albufera Sauce; Wagyu Beef Striploin with Hasselback Potato and Truffle Béarnaise; and Australian Lamb Rack accompanied by Traditional Ratatouille and Café de Paris sauce. Desserts round out the French-inspired experience with Escoffier’s signature Peach Melba — an enduring classic — served alongside tableside traditional tiramisu and an indulgent dessert corner featuring an ice cream station, chocolate fountain, and freshly made crêpes. Enjoy all the beloved brunch favorites including a lavish seafood spread on ice – including steamed blue crabs, lobster claws, rock lobsters, Argentinian prawns, sea snails, king crabs, fresh langoustines, and French oysters – as well as Japanese offerings highlighting sushi, sashimi, shrimp tempura, Japanese don, and kani miso.
The Brunch Club, taking place every three months at the VIU restaurant, transforms the usual brunch into an exciting meal by featuring special seasonal ingredients or collaborations with guest chefs designed for unique culinary adventures. This July marks the second Brunch Club event that VIU has hosted in 2025.
The Brunch Club showcasing VIU’s Signature Sunday Brunch x Disciples Escoffier Thailand is priced at THB 4,000++ per person including free-flow champagne. Wine pairing is available for an additional THB 2,000++ per person. The brunch takes place on Sunday, July 13, 2025, from 12:30 PM to 3:00 PM at VIU, located on the level 12 of The St. Regis Bangkok.
